A lesson from City's top chef

Mark Rossi, Executive Chef from The Abode Hotel will be the special guest chef at Canterbury College’s Beretun Restaurant later this month in a series of new fine dining evenings.

Mark has offered his services to the College as part of his commitment to the training of young chefs for the future. As a former catering student himself he is very aware of the necessity for students to obtain a broad training and experience in order to offer the best services to any future employer.

Students on the College’s Catering & Hospitality Courses will be producing a magnificent three course gourmet meal working to Marks’ direction and menu. He is known for his love of ‘the Garden of England’, and uses local suppliers and products in his catering where he takes classic dishes and gives them a modern twist.

Mark said, ‘I am very excited for this opportunity. Several of my junior team are students studying at the college and I am consistently impressed with their determination and abilities in the kitchen. I am delighted to be able to come into the college and work with all of them directly.’

Mark has been at The Abode Hotel since it opened under Michael Caines name. Prior to arriving in Canterbury, Mark worked with Nico Ladenis at the 3-star Michelin restaurant Chez Nico in Park Lane and has also cooked with the Roux brothers at the famous Waterside Inn. Mark also served a stint with Phil Howard at the 2-star Michelin The Square in London where he added to his classical training and knowledge.

Chef lecturer, Jackie Stone, from Canterbury College who has been working closely with Mark to arrange this event said: ‘Having Mark come to the college is really exciting, the students are now very keen to show off their skills and gain as much from the day as possible. We aim to provide our students with a broad base of experience before they leave college and take permanent positions in the catering industry.’
